Have you started the Weight Watchers Freestyle program yet? If so, I hope you’re loving it as much as I am! One of my favorite things about freestyle is that eggs are ZERO points now. Because I love them, I have been getting very creative lately with my egg recipes. Hence, myWeight Watchers Breakfast Casserole.

Here are my FAVORITE casserole dishes, great for any casserole, dishwasher safe, and easy to clean!!

Weight Watchers Breakfast Casserole

Ingredients for Weight Watchers Breakfast Casserole

6 eggs
1/4 cup fat free shredded cheddar
4 turkey sausages, chopped up
1/2 red onion
1/4 cup cherry tomatoes, sliced in half
1/4 cup mushrooms
1/2 bell pepper
pepper
garlic salt
oregano
red pepper flakes

It is only 1 SmartPoint (Freestyle) for 1/4 of the casserole!

Crack 6 eggs into a bowl and stir (like you’re making scrambled eggs).

Add all other ingredients and mix together.

Transfer to a casserole dish.

Bake at 350* for about 35 minutes or until eggs are cooked through.

Ingredients

  • 6 eggs
  • 1/4 cup fat free shredded cheddar
  • 4 turkey sausages chopped up
  • 1/2 red onion
  • 1/4 cup cherry tomatoes sliced in half
  • 1/4 cup mushrooms
  • 1/2 bell pepper
  • 1/2 tsp pepper
  • 1/2 tsp garlic salt
  • 1/2 tsp oregano
  • red pepper flakes to taste

Instructions

    I think that the confusion lies in the brand of turkey sausage that is being used. Apparently not all turkey sausages are built the same? IDK. I’m definitely making this recipe! I make a egg scramble every morning with most of these ingredients and a casserole sounds so much easier and less time consuming. Thank you for sharing!
    Also, I just saw that if you use Butterball Natural Inspirations Turkey breakfast links that its the same amount of links for 2 points (1 less than Jimmy Dean).

    I wanted to try this recipe, but there are no measurements for the seasonings, nor does it say what size dish it goes in. Is it possible to get that info?

      Thank you so much for bringing this to my attention. Sometimes I leave herbs/seasoning out because I find some people don’t like oregano and some like more garlic, etc. So you can use my guide line and certainly change them as your tastes see fit!
