The way to my heart is definitely through my stomach, and with these delicious cookies, it’s true of everyone else, too. When this love-centered holiday rolls around, I love to make batches of these cookies for my friends and family as an easy, simple way to show how much I care. Recipe note…Since this is the easiest cookie recipe, I make these year round by changing out the sprinkles. Ingredients

These cookies use a cake mix base, so there are very few ingredients in them. You’ll find everything you need easily at your local grocery store. See the recipe card at the end of the post for exact quantities.

How to Make Valentine Confetti Cookies

These cookies are super easy to make and come together so quickly. It only takes a few simple steps and a few minutes. That’s all there is to it!

Step 1: Prep

Preheat the oven to 350 degrees and line 2 cookie sheets with parchment paper. Bake 1 cookie sheet at a time or bake two, then bake the next batch separately.

Step 2: Combine the Dry Ingredients

Mix the cake mix and baking soda in a large bowl.

Step 3: Combine the Wet Ingredients

Combine the eggs, vegetable oil, and vanilla extract in another bowl.

Step 4: Make the Batter

Add the egg mixture to the cake mixture and beat with an electric mixer until combined. Then, add Valentine’s sprinkles and mix.

Step 5: Bake

Scoop out the dough with a small cookie scoop and place each ball on the prepared baking sheet, leaving an inch between each dough ball. Sprinkle with more Valentine’s sprinkles and bake for 8 to 9 minutes until the cookies begin to brown slightly.

Step 6: Cool

Remove the cookies and let them cool on the cookie sheet for 3 minutes. Then, transfer them to a cooling rack to cool completely. Then do this again with the next cookie sheet. Enjoy!

Variations

  • Use your favorite cake mix for these cookies. Any will work!
  • Try adding white chocolate chips to the batter for more flavor.
  • You can frost these cookies with pink buttercream frosting if you like.

  • Let the cookies cool on the baking sheet first so the carry-over cooking time can finish baking them.

Ingredients

  • 1box(18.25 oz) white cake mix
  • 2tspbaking soda
  • 2largeeggs, at room temperature if possible
  • 1/4cupvegetable oil, I used avocado oil, coconut oil works too
  • 2cupsValentines mixed sprinkles and nonpareils
  • 1/2tspvanilla extract

Instructions

  1. Preheat oven to 350 degrees.

    Line 2 or 3 cookie sheets with parchment paper.

    Add cake mix and baking soda in a large bowl.

    Whisk together to blend.

    Add the eggs, vegetable oil, and vanilla extract in a bowl or measuring cup.

    Whisk to combine.

    Add the egg mixture to the flour mixture.

    Use a stand or hand held mixer to combine the ingredients.

    Continue to mix until it turns into dough.

    Add 1 1⁄2 cups sprinkles and stir lightly to mix them throughout the dough.

    Measure out the size of the cookie ball by using a small cookie scoop.

    Place each cookie ball on the prepared cookie sheet leaving room between each dough ball.

    Sprinkle remaining sprinkles on top of the cookies

    Bake at 350 degrees until they begin to turn lightly brown, this should take about 8 to 9 minutes.

    Take out of the oven and allow the cookies to cool on the cookie sheet for 3 minutes then move them to a cooling rack and let cool another 2 minutes.
